After reading about the new Star Wars fan film competition on Slashdot, I stumbled across Pink 5 on Atom Films. Pink 5 reveals the adventures of Stacy, an X-Wing pilot who normally isn't allowed to fly, but since the rebels have to destroy the Death Star and everything they're pretty much using everybody they have.
