Mmost definitely the biggest difference comes from the technique. Armwrestling with a correct table is quite dissimilar to what you see in mixed fantasy videos or in the pub.
Also a specific kind of strength is required — as in every sport — which you can only get by doing exercises that follow as close as possible the actual movement in the action.
Plainly: in order to get good in armwrestling, one needs to armwrestle – a lot

Technique defect but also don’t forget that women tend to have more slender bone and joint structure. It’s generally easier to twist a woman’s hand and wrist than a man of equal size.

Good point sir! I noticed that she was having her wrist twisted, but didn’t appreciate the significance.

ParticipantI don’t mind her losing. WHY? 1, because she looked hot doing it, and 2, she can press them all overhead! Can they do the same to her..? Doubt it!

Here is a sample from the professional armwrestler Heidi Andersson who is a multiple world champion in 65 kilos.

And British teen sensation Joanne Poole in Dailystar. explaining some technique. (video and interview)
And here’s Irina Makeeva. No. 1 ranked female armwrestler.
Sparring with men. Bad quality unfortunately.
